I highly recommend doing the hop on/hop off bus on your first day because this will help you get acquainted with the city, as well as letting you chill out and relax without the stress of trying to figure out where to go when you first arrive in the city. Take a Paella cooking class. While this can be found on almost any tourist site, I find airbnb experiences to be the most personable.
